Form filling problem at the pdf file edited using Acrobat

There is an extra bonus example that can be found here:

This example is in fact a set of two examples.
1) a form as it is made in the book (without unicode).
-> the font of the field is changed and unicode characters are added.
2) a form that support the direct insertion of unicode fields.

Note that iText throws this error:
"Font 'HYSMyeongJoStd-Medium' with 'UniKS-UCS2-H' is not recognized."
Have you tried using HYSMyeongJo-Medium or HYSMyeongJoStd?
